anyone else know that saying?? Maybe it's just me...

Well we made it home from our road trip to Utah. We were there for two whole weeks which means that we had lots of fun. I wasn't so sure about the whole driving for 13 hours thing with the kids, but it worked out fairly well with only a few hitches. The kids did really well thanks to lots of tips from seasoned road trip veterans, and DVDs. Curious George? You're my best friend.

Sorry to those of you who have asked for the muffin recipe. I didn't have it with me, and I am not smart enough to remember it... Oh, and now I am worried that I have gotten your hopes up. You may not think they are the bees knees as we do...

BANANA MUFFINS

3 Very ripe bananas
1/2 C honey (I use agave nectar)
3 TBSP canola oil (I use olive oil)
1 tsp vanilla extract
1 1/2 C whole wheat flour (I substitute half of the flour with almond meal)
1 1/2 tsp baking soda
1/4 tsp salt (usually exclude this)

Preheat oven to 350. spray muffin tins (I use minis). Mash the bananas and mix with the honey, oil, and vanilla. Stir together the flour, baking soda and salt. Blend the two mixtures and spoon into the tins. Bake for 15 mins or until center is set (I usually end up having to cook a little longer).

I don't follow the directions very well and just mix it all together. Never had a problem.

The purpose of me getting on my computer just now was to e-mail you to see if you would send me the banana muffin recipe because I want to make them to take to lake Powell. I decided to check a few things before I did that and lo and behold you posted the recipe! We must have been on the same wave length (must be the matching hair cuts! ha) I'm excited to make them!

We made your muffins this morning! It was a very quick recipe and they were so moist! I didn't have wheat flour but subbed 1/3 of the flour for flax seed meal and liked how it turned out. Thanks for sharing!
